In the Unifine Process the grain enters a high speed rotor and is instantlyshattered into fine flour - even the bran and germ are burst! Air goesthrough the rotor with the grain and blows the flour out, thus keepingit cool throughout the process, retaining many nutrients. With the UnifineProcess the natural oils in the grain are kept intact and do not get hotlike in regular grain milling and stoneground milling. Unifine Processflour is great for fine-textured breads.

Whole Wheat Pastry Flour made from Soft White Wheat which is lower in proteinand higher in carbohydrates than the Hard Wheat varieties and is thereforebetter suited for pastries, cookies, muffins, cakes, pancakes, and waffles.
